Smoked Salmon Chowder Recipe
Looked through some Smoked Salmon Chowder recipes online and derived this from what looked good from several recipes. Starts with a stick of butter as many tasty recipes do, may not be the most healthy but it sure tastes great and it really sticks with you.
- 1 stick of butter
- 1 leek finely diced
- 2 stalks of celery finely diced
- 6 cloves of garlic finely diced
- 1 carrot finely diced
- 4 cups broth (vegetable or chicken)
- 1⁄4 tsp thyme
- 2 tablespoons tomato paste
- 2 cups cubed potatoes
- 2 cups half and half
- 1⁄4 cup flour
- 1 cup heavy cream
- 1 pint canned smoked salmon flaked into small pieces
- Salt & pepper to taste
Sauté leek, celery, garlic and carrot in the butter on high heat until soft and starting to brown a little.
Add broth, tomato paste and thyme, bring to boil. Add potatoes, boil for 10 to 15 minutes until potatoes are soft
Whisk the 1⁄4 cup flour into the half and half. Turn heat down to medium low and mix in the half and half, heavy cream and Salmon. Let it thicken for a bit. Add salt and pepper to taste, serve.
